At the end of the ice cream season, Van Spronsen & Partners mapped the development of ice cream parlors. Over the past five years, the number of ice cream parlors in the Netherlands has risen sharply, from 728 to 1028. This represents an increase of approximately 41%, with a similar percentage increase during and after the coronavirus pandemic.

All of the Netherlands eats ice cream
Drenthe has seen the largest percentage increase in the number of ice cream parlors over the past five years, with an increase of 68,8%. However, in absolute numbers, South Holland has seen the fastest growth, with 68 new establishments, meaning South Holland also has the most parlors by far (213). Although Drenthe has seen the largest percentage growth in recent years, the number of ice cream parlors in every province has increased by at least 20%.
The ice cream parlor: a bright spot in a crisis
As one of the few sectors in the hospitality industry, ice cream parlors continued to grow steadily during the coronavirus pandemic, just as fast-food businesses did. These takeaway options largely fell outside the restrictions in place at the time. Getting ice cream became a treat, both for the sake of getting out of the house and connecting with others during the coronavirus pandemic.
Going viral
The ice cream industry has always had a broad target audience, ranging from children to seniors, but the largest groups are usually families with young children and seniors (65+). Urban young adults (15-30) have also become a more important demographic in the past five years. Ice cream parlors, like bakeries, have the opportunity to go completely viral with just one product or a beautiful parlor. This can particularly appeal to the young adult demographic.
Not yogurt, but conscious: the new ice cream choice
While frozen yogurt quickly rose in popularity in the Netherlands in 2013, it quickly disappeared again. Even though the Dutch aren't exactly eager to eat frozen yogurt, we are looking for "healthy" ice cream. Think of ice cream with less sugar, vegan ice cream, or ice cream made with natural ingredients. It's clear that young adults, in particular, are showing a greater need for this.
The future of the ice cream parlor is gray
Inflation has risen in recent years, yet we see the number of ice cream parlors continue to grow. Getting ice cream remains an accessible treat that attracts a large audience despite declining purchasing power. Furthermore, the growing group of seniors (65+) is one of the most important visitor groups. The aging population is therefore having a positive effect on the growing number of ice cream parlors. Not only are seniors good for the ice cream industry, but ice cream is also good for seniors!
